Easy beet and cabbage sauerkraut  


Ingredients  
5 cups shredded cabbage  
4 cups julienned raw beet  
1 medium apple sliced  
1 inch ginger grated  
3 garlic cloves grated  
2 tablespoons coarse sea salt  

Method  
Massage cabbage with salt until juicy.  
Mix in beet, apple, ginger, and garlic.  
Pack tightly in a clean jar so liquid covers the mix.  
Top with light salt brine if needed.  
Weight the mix under the brine. Cover loosely.  
Leave at room temperature four to five days then move to the fridge. Taste after ten days and enjoy.
